My family watches many sporting events – football, baseball, basketball, golf, hockey (and may be even soccer). We love to have these snacks on a weekend with a cocktail, while watching sports before dinner. The nice thing about this recipe is I usually have all the ingredients, so I can whip them up at any given time quickly. They are also a great snack to take to party or get together.
1 bag seasoned waffle fries (I use Alexis Waffle Fries)
1 two cup pkg. shredded cheddar cheese
1 pkg. bacon bits
1 bunch of scallions (green onions)
Sour cream and or ranch dressing
Line a cookie sheet with foil or parchment paper. If you use foil, spray the cookie sheet with a non-stick cooking spray.
Spread the waffle fries in a single layer on the cookie sheet. Bake per the directions of on the waffle fries, making sure to turn the waffle fries halfway through cooking.
While the waffle fries are cooking, cut the scallions in slices using both the white and green parts. At the end of the cooking time, remove the cookie sheet from the oven. Divide the package of cheddar cheese on each waffle fry (the amount on each fry will vary based on the size of the fry itself). Sprinkle the bacon bits and half of the scallions over the cheese.
Place the cookie sheet back in the oven for a short time until the cheese is fully melted. Remove the waffle fries and sprinkle the fries with the remaining scallions immediately.
Serve with sour cream and or ranch dressing.
