Hot Cocoa Cookies 

Makes 35-45 cookies 

Ingredients

Cookie Ingredients:

  • 1/2 cup (1 stick) unsalted butter
  • 12 oz. semi-sweet chocolate
  • 1 1/2 cups flour
  • 1/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups brown sugar
  • 3 eggs
  • 1 1/2 teaspoons vanilla extract
  • 25 (approx.) large marshmallows

Icing Ingredients:

  • 2 cups powdered sugar
  • 4 tablespoons (1/2 stick) unsalted butter, melted
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup hot water
  • 1/2 teaspoon vanilla extract
  • Assorted sprinkles

Directions

For the cookies:

  1. Melt the butter and chocolate together until smooth. Set aside to cool slightly.
  2. Whisk together the flour, cocoa powder, baking powder, and salt in a separate bowl.
  3. Beat the brown sugar, eggs, and vanilla until well combined in a mixing bowl.
  4. Add the melted chocolate mixture to the sugar mixture and mix until smooth.
  5. Gradually add the flour mixture, stirring until just combined. Cover the dough and refrigerate until firm.
  6. Preheat the oven to 325°F (165°C). Line baking sheets with parchment paper.
  7. Shape the dough into balls, place them on the baking sheets, and flatten slightly. Bake for about 12 minutes.
  8. While the cookies bake, cut the large marshmallows in half.
  9. Once the cookies are done baking, press a marshmallow half into the center of each cookie and return to the oven for an additional 2-3 minutes.
  10. Allow the cookies to cool on the baking sheets before transferring them to a wire rack to cool completely.

For the icing:

  1. Mix powdered sugar, melted butter, cocoa powder, hot water, and vanilla extract until smooth.
  2. Drizzle or spread the icing over the cooled cookies and decorate with assorted sprinkles.
