Autumn Flavor: The Perfect Boiled Cider Recipe

I recently discovered a simple but impactful recipe to add to my autumn arsenal: boiled cider. Whether you’re making pies, cakes, or cookies, this versatile syrup is sure to bring a burst of apple flavor to your favorite recipes. Here are some easy steps on how to make a delicious boiled cider recipe.

What you need:

  • Your favorite fresh Apple Cider
  • 5- quart Dutch oven, or a metal or cast iron pot

Directions:

1. Select how much cider you want to start with. Approximately one gallon of apple cider reduces to two cups, so I recommend starting with at least that. Depending on the recipe, a half-gallon is plenty.

2. Pour the cider into your pot and bring to a boil. Once it starts to bubble, turn the temperature to low.

3. Let it simmer for 4 to 6 hours – give it a quick stir once every 30 minutes. During the last hour, stir every 10 minutes or so.

A fun twist: Throw some cinnamon sticks or orange peels into the simmering pot to infuse it with unique flavors that truly make it one of a kind!

The biggest indicator of knowing your cider is done is bubble color. About five hours in my pot, the cider began producing dark copper-colored bubbles covering the entire surface. You can also tell by the consistency. Boiled cider has a similar thickness to honey. You’ll notice that since it is hot, the consistency will be like “runny honey.” Once it cools, it is very similar to room-temperature honey.

What to avoid: Overcooking your cider. If the consistency starts to mimic molasses, it’s a bit overdone. You can definitely still use it, but it will have a sour taste. If the consistency becomes more like taffy, you run the risk of it being too sticky to use or consume, and the taste will become bitter.

Once you’ve finished, you can store your cider in the fridge. I recommend storing it in a glass container. If you plan on using it the next day, just make sure to take it out of the fridge with plenty of time for it to come back to being room temperature.
